Food of the week...Acorn squash

Hi everyone! Looking for some comfort food that is actually healthy? I have a recipe for you that will not disappoint!

Recipe: Acorn squash chili bowl

Portions: Fills 2 acorn squashes+ extra filling


- 2 acorn squashes
- 2 medium sweet potatoes
- Olive oil
- 1 tbsp Tex Mex seasoning
- 450g ground turkey
- 2 cans of diced tomatoes, no salt added
- 1 tbsp tomato paste
- 2 cups mushrooms
- 1 cup green peas, frozen
- ½ medium white onion
- 2 garlic cloves
- Cheese, low fat, shredded to taste
- Cilantro for garnish
- Salt and pepper to taste


1) Preheat oven to 400*F. Cut the top and bottoms of the acorn squashes. Cut the sweet potatoes in half. Add olive oil and bake in the oven for 45 min.
2) Chop the onions. garlic and mushrooms.
3) In a large casserole on the stove top, cook the onion and garlic on medium-high heat in olive oil. Add mushrooms, canned tomatoes, tomato paste, green peas, turkey and Tex Mex seasoning.
4) Once the sweet potatoes are baked, remove the peel and add into the casserole. Mix. Add salt and pepper to taste.
5) Add the chili mixture into the acorn squash. Top with cheese and cilantro.
