Let's face it, it's difficult to get vegetables in the diet during the holidays. This holiday, let’s bring our own dessert to the party that’s packed with vegetables!
Recipe: Beet chocolate cranberry cookies
Portions: 12 cookies
Time: 35 min
Ingredients:
-1 medium beet
-1 cup whole wheat flour
-1 cup oats
-1 tsp cinnamon
-1/4 tsp salt
-1 tsp baking soda
-1/4 cup maple syrup
-2 tbsps olive oil
-2 eggs
-1/4 cup cranberries, dried
-1/4 cup chocolate chips
Preparation:
1) Preheat the oven to 350*F.
2) In a large bowl, add the flour, oats, cinnamon, salt & baking soda. Mix and set aside.
3) Cut the beet in bite-sized pieces.
4) In a blender, add the beet, maple syrup, olive oil & eggs. Blend.
5) Add the wet ingredients to the dry ingredients. Add the cranberries & chocolate chips. Mix.
6) Separate the mixture into 12 balls. Place them on a cooking sheet on a cooking tray. Bake for 18-20 min.
