Very berry Merry Christmas pancakes

Not sure what breakfast recipe to make on Christmas morning? Here’s a healthy recipe that you and your family can enjoy.



Recipes: Very berry merry Christmas pancakes


Portions: 3 pancakes
Time: 30 min

Ingredients:

-1 cup whole wheat flour
-1/2 cup oats
-1 tsp baking powder
-1.5 cups mixed berries, frozen, thawed
-1.5 cups milk, skim
-1/2 tsp vanilla essence
-Olive oil

Filling:
-1 cup yogurt, Greek, 0%, plain
-1 tsp cinnamon
-2 tbsps maple syrup

Preparation:

1) In a blender, add the flour, oats, baking powder, berries, milk & vanilla essence. Blend.
2) In a pan, add some oil and then some batter. Cook until golden brown.
3) In a bowl, add the yogurt, maple syrup and cinnamon. Mix.
4) Create layers by alternating pancake and then yogurt mix.
