Food of the week: Salmon

Looking for an easy meal prep idea? Here’s a great recipe for you! It can be used for breakfast, lunch or supper.


Recipe: Smoked salmon omelette


Ingredients:

-100g smoked salmon
-1.5 cups mushrooms, white, whole, raw
-1/2 onion, red, small
-1/2 tsp saffron
-1/2 tomato, large
-8 eggs
-2 cups spinach, baby
-1/2 cup feta cheese, chopped

Preparation:

1) Preheat oven to 400*F.
2) Chop the mushrooms, smoked salmon, onion, tomato & feta cheese.
3) In a large bowl, add the eggs, salmon, mushrooms, onion, saffron, tomato & spinach. Mix.
4) Add the mixture in a large casserole. Add the feta cheese on top.
5) Bake in the oven for 30 min.
