Food of the week...Pumpkin!

Happy Tuesday everyone! Hallowen is right around the corner. That is why this week we are focusing on pumpkins. Yay!



How delicious does this look? Very! If you are looking for a stew that brings you comfort while the days are getting colder. Here is a recipe for you.

Recipe: Pumpkin tilapia stew


Portions: 6
Preparation: 10 min
Cook: 45 min

Ingredients:

- 1/2 large pumpkin, chopped
- 5 tbsps olive oil
- 1/2 medium red onion
- 3 garlic cloves
- 3.5 cups mushrooms, chopped
- 2 cups peas, frozen
- 5 pieces tilapia, frozen
- 3 cups waters
- 1 can tomatoes, diced, no salt added
- 1/4 cup tomato paste
- 1 tbsp thyme, dry
- 2 bay leaves, dry
- 1 tbsp cumin, ground
- Salt & pepper to taste

Preparation:

1) Preheat oven to 375°F. Add oil, salt & pepper on the pumpkin flesh. Cook for 20 min. Remove the pumpkin peel & chop into cubes once cooked.
2) In a large saucepan, add the oil, onion & garlic. Cook for 5 min on medium-high heat.
3) Add water, canned tomatoes, tomato paste, mushrooms, peas, thyme, bay leaves & cumin. Cook for 10 min.
4) Add the tilapia & pumpkin. Continue cooking for 10 min. Season with salt & pepper to taste.
