Food of the week...Spaghetti squash

Hi everyone! Here is a YUMMY and HEALTHY dessert you won’t want to miss. For all of you chocolate lovers out there. This one is for you!



Recipe: Spaghetti squash chocolate muffins


Portions: 12 muffins
Time: 1 hour

Ingredients:
- ½ spaghetti squash (2 cups shredded)
- 1.5 cups whole wheat flour
- 1/3 cup cocoa powder, unsweetened
- 1 tsp baking soda
- ½ tsp baking powder
- ¼ tsp salt
- 1/3 cup milk
- ¼ cup olive oil
- 1/3 cup maple syrup
- 1 large egg
- 1 tsp vanilla extract
- ½ cup chocolate chips

Preparation:

1) Preheat oven to 400*F. Sprinkle the flesh of the spaghetti squash with water. Cook in the oven for 30 min.
2) In a bowl, add the flour, cocoa powder, baking soda, baking powder & salt. Mix and set aside.
3) In another bowl, add milk, olive oil, maple syrup, egg & vanilla extract. Once the squash is cooked, let cool for 15 min and then add to the bowl. Mix.
4) Add the dry ingredients to the wet ingredients and stir. Add the chocolate chips.
5) Divide the batter into 12 muffin cups. Cook in the oven at 350*F for 20 min.
