Food of the week...Corn!

Hi everyone! This week we will be focusing on corn. It is not only YUMMY, but it is also super nutritious.



I am super excited to share this recipe with you! This recipe will have all of your taste buds going. I call this my Sweet, Salty, Spicy corn casserole.


Recipe: Sweet, Salty, Spicy corn casserole


Portions: 8
Prep: 15 min
Cook: 30 min

Ingredients:

- 1/2 cup milk
- 12 eggs
- 3 medium tomatoes
- 5 medium potatoes
- 2 medium bell peppers
- 4 garlic cloves
- 1.5 cups mushrooms
- 1/4 cup anchovy stuffed olives, chopped
- 2 tbsps hot peppers
- 1 cup cheese, grated
- 2 cups corn
- Olive oil
- 1 tbsp Tex Mex
- 1/2 tsp coriander, dry
- 1 tsp cayenne pepper
- Salt & pepper to taste

Preparation:

1) Preheat oven to 375°F. In a pan, on medium-high heat, add olive oil & cook potatoes for 10 min. Add Tex mex. Set aside.
2) In the same pan, add more oil. Cook bell peppers, garlic, mushrooms, hot peppers, & olives on medium heat. Add coriander & cayenne pepper. Set aside.
3) Mix the eggs with the milk in a bowl. Add pepper.
4) In a casserole dish, add potatoes, egg-milk mixture & vegetables. Cook in the oven for 20 min.
5) Remove the casserole from the oven. Add tomatoes, corn, cheese & continue cooking in the oven for 5 min on broil.
