Hi everyone! If you love burgers, here is a recipe for you. This vegetarian burger is filled with vegetables and has less saturated fat than your average beef burger.
Recipe: Sweet potato quinoa POWER burger

Ingredients:
Burger:
- 2 medium sweet potatoes
- 1.5 tbsps Olive oil
- 1 cup quinoa, Tricolor, dry
- 1 can black beans, drained and rinsed
- 1 tbsp steak seasoning
- 2 eggs
- Salt & pepper to taste
Sauce:
- 3 tbsps mayonnaise
- 1 tsp sriracha sauce
Toppings:
- Avocado
- Lettuce
- Tomato
- Onion, red
Preparation:
1) Preheat oven to 400*F. Cut the sweet potatoes in half and add olive oil. Bake in the oven for 45 min or until soft.
2) While the sweet potatoes are baking, cook the quinoa & mash the black beans.
3) Once the sweet potatoes are cooked, mash them.
4) In a large bowl, mix the sweet potato, quinoa & black beans. Add the eggs & the steak seasoning. Add salt & pepper to taste.
5) On a sheet pan, lay 8 balls of the mixture on a cooking sheet. Slightly flatten the balls. Bake in the oven at 425*F for 25 min or until most of the moisture is gone.
